Chef Eric Neri continues to make a splash at the Maritana Grille located inside the historic Don CeSar, a Loews Hotel. A lighter and refreshed interior of new paint, lighting, carpeting and upholstery and an updated, healthier menu keeps the dining experience evolving without loosing a sense of its former self. A mixologist at the bar will prepare a cocktail of choice or a delightful, crisp apple martini.

Choose from three tasty soups to begin the meal – Main Lobster Bisque, Cauliflower soup or the Caramelized Onion soup. The onion soup with a classic broth presentation poured over a gruyere soufflé offers a light onion flavor combining nicely with the cheese and brioche toast. A selection of appetizers ranges from steak tartar to a tuna duo. A favorite is the Chilled Seafood Bar with a mouth-watering display of Hawaiian Blue prawns, Alaskan King crab, West Co
ast oysters, East Coast scallop and Avocado Ceviche with chili oil and arugula pesto. The addition of the John Green salad is named for the general manager, John Marx, who wanted a plain and simple, no-fuss green salad. Other options include a grilled white asparagus under a bed of greens topped with balsamic vinaigrette.

Entrees of fresh fish in a variety of preparations from the sous vide, wood grilled and smoked or cast iron griddle include halibut, black grouper, wild salmon and mahi-mahi, hamachi or blue praron. For meat lovers, the menu offers a melt-in-your-mouth filet mignon with truffle, mashed candied shallots and tomato confit or a tasty Colorado lamb lion served with a savory mushroom risotto. Each course can be expertly paired with wine selected by the sommelier.

End the meal with a nod to the past – Hickory Campfire Smores, a civilized smore with two homemade graham crackers with marshmallow, chocolate fudge in between and served with a hickory smoked ice cream.
