Gourmet Mexican Dining at Cantina Laredo | By Ronda M. Parag
A tasty margarita along with chips and deliciously prepared table-side guacamole say there is no need to travel south of the border for delicious Mexican food. Cantina Laredo, located in the Shops at Wiregrass in Wesley Chapel, offers a Mexico City style menu with flavorful beef, chicken and fish entrees with signature sauces.
From a variety of tacos filled with chicken, mahi mahi, brisket beef or vegetarian taco with spinach, cheese and mushroom, the entrees are palette pleasers. Fajitas and a choice of six hand rolled Enchiladas are on the menu for dinner. A few of the house specialties include Camarones Escondidos — a grilled chicken breast stuffed with shrimp, topped with spinach and chipotle-wine sauce, or for a sampling try the Cantina Laredo Platter offering a Oaxca cheese chile relleno, tamale, chicken enchilada, and fajita beef taco.
A variety of specialty margaritas include flavors of pomegranate, orange liqueur, mango and blackberry and the Casa Rita, the signature drink with a blend of Giro Silver Tequila by Sauza, Cointreau Orange Liqueur and fresh-squeezed lemon and lime juices with happy hour drink specials Monday to Friday, 4 p.m. - 7 p.m. in the bar, and Thursday night is Ladies Night with drink specials offered. A selection of superior tequilas include Cabo Wabo Uno, Don Julio 1942, Gran Patrón Platinum and Herradura Selección Suprema.
The Sunday Brunch includes a complimentary Mimosa or Bloody Maria with classic Crab Cakes Benedict — poached eggs on crab cakes topped with chipotle-wine hollandaise sauce. Or try the specialty of the house, an Enchilada Veracruz — stuffed chicken, spinach and cheese topped with tomatillo sauce, marinated vegetables and queso fresco.
End on a sweet note with the Mexican Apple Pie or Brownie, sizzled in brandy butter and topped with a scoop of vanilla or cinnamon ice cream.
