Chef Jeannie Pierola recently performed at the famed James Beard House

 

This month, Chef Jeannie Pierola and her team at edison: food + drink lab, headed to New York City to delight diners and guests at the famed James Beard House. On October 20, 2015, Tampa native Chef Jeannie Pierola paid tribute to her Spanish and Cuban roots and wields modernist techniques behind the stove. This one-of-a-kind Beard House dinner showcased Pierola’s forward-thinking spin on indigenous Tampa cuisine, with offerings that only her curiosity can conjure up. Imagine starters of Cracked Conch Mojitos with Sugarcane, Muddled Mint and Finger Limes; Sea Urchin Flan with de Naranja with Candied Navel Orange and Sarasota Sturgeon Caviar; Yellowfin Tuna Tartare Picadillos with Foie Gras Torchons on Toasted Brioch. The dinner menu delighted with delectables including Everglades Frogs’ Legs, Stone Crab Causeway Enchilados, Grits and Grunts, Rabbit Potaje, and Dry-Aged Duck Breast. The dinner finished with a delicious miniature Rum Cake – Cuba Libre.

“I am absolutely elated to be cooking at the fabled James Beard House,” said Chef Pierola. “ I have been lucky having had the opportunity to cook at the James Beard Awards one year, but never at his House. So for me, cooking at his home, his hearth, his place of family, warmth, and breaking bread, where over time, so many chefs I admire and respect have cooked, it is a thrill to say the least. I can cross it off my bucket list.”
